French onion soup with rosemary and cheddar crostini’s

A delicious French onion soup, done in minutes!


  • A knob of butter or little olive oil
  • 500g red onions, peeled and finely sliced
  • 400ml chicken stock
  • 2 rosemary sprigs, finely chopped
  • 4 slices of fresh bread
  • 150g cheddar cheese, grated
  • Salt
  • Pepper


  1. Melt the butter or heat the oil in a pan and pre-heat the oven to 180c
  2. Fry the onions on a low heat for half an hour so the onions caramelise
  3. Add the rosemary and fry for another couple of minutes before adding the chicken stock, salt and pepper. Simmer on a low heat for 10 minutes
  4. Meanwhile, toast the bread, drizzle with a little olive oil, salt, pepper and the cheese. Grill in the oven until the cheese is melted and had become a little crunchy
  5. Serve the French onion soup topped with the crunchy cheesy crostini’s
