Thai Tom Kha Gai coconut soup

Tom Kha Gai – A delicious and fragrant lemongrass, coconut and lime soup. It is easy, ready in just moments, healthy and delicious! Serve with white rice or eat as a soup.


INGREDIENTS

  • 1 can of coconut milk (400ml) (try and find a good quality one with at least 70% coconut extract- Blue dragon is a great brand and they sell cartons which is a lot healthier due to BPA lining used in cans)
  • 300 ml chicken stock
  • 3 lemongrass stalks, 2 finely chopped and the other one cut in 3 and bashed with the back of a knife
  • 7 kaffir lime leaf, bashed with the back of a knife
  • 1 thumb sized piece of galangal (when not available use ginger), roughly chopped
  • 1 bird eye chilli
  • 2 chicken breasts or chicken thighs
  • 400g brown cup mushrooms, sliced
  • 2 limes, juiced
  • 4 tbsp. fish sauce
  • 10 peppercorns, crushed
  • A bunch of coriander, roughly chopped

DIRECTIONS

  1. Add the chopped lemon grass, galangal, half of the lime leaf and crushed peppercorns to the coconut milk and stock to a boil, simmer for about 10 minutes and strain
  2. Meanwhile slice the chicken in bite sized pieces and put aside
  3. Add the rest of the lime leaf, lemon grass and chicken into the strained liquid and simmer for another 10 minutes
  4. Add in the mushrooms and let simmer for another 5 minutes
  5. Season with lime juice and fish sauce and garnish with the coriander
