Easy homemade Mayonnaise

In the category ‘never store bought again’ , Homemade Mayonnaise. Not only is homemade mayo much nicer, it’s also healthier. Add some yoghurt and a few finely chopped garlic cloves for a delicious Garlic Mayo!


INGREDIENTS

  • 3 Egg yolks
  • 2 Tsp. Dijon mustard
  • 250 ml olive oil
  • 150 ml sunflower oil
  • 3 tablespoons white wine vinegar
  • 1 lemon
  • Sea salt
  • Pepper
  • A little sugar (optional)

DIRECTIONS

  1. Mix yolks and mustard (this is easiest in a food processor but can also be done by hand/hand mixer)
  2. Very slowly add about half the oil, stopping every now and then to let is combine properly
  3. Add in rest of the oil a little faster and mix until smooth, thick consistency
  4. Add in the vinegar and the lemon and mix until combined
  5. Season to taste and store your homemade mayonnaise in the fridge up to two week
