Cinnamon swirl French toast with nuts, blueberries and maple syrup

French toast upgraded! For a lazy weekend’s breakfast or a great brunch with friends. Play around with the toppings trying strawberries, blackberries, raspberries, bananas, hazelnuts, walnuts, jams or Nutella! 


  • 2 Eggs
  • 2 Slices of cinnamon swirl bread or stale white bread (recipe for Cinnamon Swirl bread can be found HERE)
  • 200ml Milk (any kind but I prefer to use almond milk)
  • 1 Orange or lemon zested
  • 1 Tsp. cinnamon
  • A good handful of berries (I used blueberries)
  • Almonds, roughly chopped
  • Pecans, roughly chopped
  • Maple syrup
  • Butter for baking


  1. Mix eggs and milk together with a little cinnamon and zest of a lemon or orange
  2. Soak the bread until almost falling apart
  3. Gently melt butter making sure it doesn’t burn
  4. Fry bread until golden brown but still a little soft inside
  5. Meanwhile simmer down berries with a little water and some maple syrup until jam-like consistency
  6. Serve the French toast whilst still warm with berry compote, maple syrup, more cinnamon to taste and top with chopped nuts
  7. Enjoy!
