My favourite Chinese noodles – Dan Dan Main

My obsession with traditional Chinese food didn’t get any less when I discovered these amazingly delicious noodles. This popular Northern Chinese dish can be found in many different varieties. There are those who choose to add peanut sauce or Tahini but I love this classic Dan Dan. Fresh, light, delicious noodles done in under 20 minutes!


INGREDIENTS
FOR THE SAUCE
4 Tbsp Chili & Black bean sauce (I love the Lao Gan Ma brand)
3 Tbsp Black beans
2 Tbsp Chinese Rice Wine
1 Tsp Sesame oil
3 cm Ginger, peeled and grated
4 Garlic cloves, peeled and grated
½ teaspoon Sichuan peppercorn powder (I used whole Sichuan peppercorns and ground them in a mortar and pestle)
½ Five spice powder
2 teaspoons sugar

OTHER
500ml Organic Chicken or Beef stock
500g Organic, Grass fed, Pork mince
200g Rice noodles (I like to use udon, somen, egg or simply Chinese noodles)
½ Cucumber, peeled and grated

DIRECTIONS
Combine the sauce ingredients, mix well and set aside
In a little oil, fry the beef until brown
Add stock and simmer until most of the liquid has evaporated
Add the sauce to the beef and combine well
Cook noodles AL DENTE, combine with beef sauce, top with grated cucumber
Enjoy it like the Chinese do with pieces or raw garlic on the side. Delicious!
