Vanilla, Blueberry and Blood Orange Rice Pudding

I love rice. Any type of rice really, but this lovely dessert is definitely one of my all time favourites. Done in just moments and a great little dessert for any meal. Delicious. 


INGREDIENTS

  • 100g Pudding rice (short grain)
  • 600ml Milk (or almond milk for a healthier choice)
  • 200ml Single cream
  • 1 Lemon, zested
  • 1 Vanilla pod, de-seeded
  • 1 Cinnamon stick

FOR THE BLUE BERRY & BLOOD ORANGE COMPOTE

  • 2-3 Blood oranges, juiced
  • 100g Blueberries
  • 2-3 Tbsp. Caster sugar (or agave or maple syrup)
  • A little lemon juice to taste

DIRECTIONS

FOR THE RICE PUDDING

  1. In a pan, add the rice,milk, cream, cinnamon, vanilla seeds and pod
  2. Stir well and bring gently to the boil
  3. Cook the for about 30 minutes and stir every now until all the liquid is absorbed and the rice is cooked but still has a bite to it
  4. Serve the rice pudding hot or cold and top with the blood orange compote

FOR THE BLOOD ORANGE COMPOTE

  1. Combine the orange juice, sugar and lemon juice in a pan
  2. Add the blueberries and simmer down until the berries have completely broken down
  3. Stir until the sauce has thickened and add more sugar if required

Top the rice pudding with pistachios to add a delicious crunch!
