Caramelised Garlic Houmous

I love houmous. In fact, I love it so much that I eat it for breakfast, lunch and dinner most days. This houmous recipe is a great twist on the classic houmous and makes a great dip for serving alongside dinner or simply served with flat bread and falafel as a quick lunch.


  • 1 Whole garlic bulb
  • 1 Can of chickpeas drained and rinsed
  • 6 Tbsp. light tahini
  • 1/2 Lemon, juiced
  • 6 Tbsp. olive oil
  • Little water, depending on the consistency you like
  • Salt
  • Pepper


  1. Pre-heat the oven to 160c
  2. Place the garlic on a baking tray and bake for about 15-20 minutes or until the garlic has softened, has lost it’s pungency and tastes sweet – BE CAREFUL WHEN TAKING THE GARLIC OUT OF THE OVEN AS IT IS EXTREMELY HOT –
  3. Push the garlic out by putting pressure on the bottom of a clove (one by one) and squeezing out the sweet garlic from the top
  4. Place the garlic and the rest of the ingredients in a food processor and mix until smooth
  5. Season to taste and add more water/oil if desired
  6. Keep up to 4 days in the fridge in an air tight container
  7. Enjoy!
