Jerusalem Artichokes

I absolutely LOVE Jerusalem Artichokes. Every year when early winter comes around, I run to Waitrose and stock up on these fragrant, delicious weirdo’s.


  • 500g Jerusalem Artichokes, peeled and sliced in fries like sizes
  • A few sprigs of Thyme
  • ½ Tsp. Apple cider vinegar
  • Salt
  • Pepper
  • A little olive oil for drizzling


  1. Pre-heat the oven to 180c
  2. Toss the Jerusalem Artichokes with a little olive oil, the thyme, salt, pepper and a little apple cider vinegar
  3. Line a oven tray with baking paper and evenly spread out the Jerusalem Artichokes
  4. Bake for about 25 minutes or until golden and slightly crispy
  5. Enoy!
