Homemade pizza using a pizza stone

An easy recipe for homemade pizza! Dating an Italian man comes with certain¬†implications. For one you’re supposed to cook pasta as a part of pretty much every meal (regardless of what that meal may be and if the dishes actually go well together) and family¬†plays an important role. Then there is the love of pretty much every Italian’s life, The Pizza, which needs to be eaten at the very least, about 3 times a day ūüėČ

  • 500g Strong flour or Semolina flour
  • 1Tsp. Salt (I use Himalayan salt which is much healthier than conventional salt)
  • 7g Dry yeast, mixed in 325ml warm (not hot!) water
  • A little olive oil
  • ¬Ĺ Tsp. Caster sugar (optional)

  • 2 Garlic cloves
  • A few sprigs of rosemary
  • 2 Tbsp. Tomato paste
  • 300ml Passata
  • Salt
  • Pepper

FOR THE PIZZA TOPPING (feel free to swap any of these for a topping of your liking)

  • 50g Blue cheese of choice. I used gorgonzola- My boyfriend thinks this is the nicest blue cheese –

“and not just because it is Italian” – F. Castagno 2015.

  • 2 Balls of buffalo mozzarella, torn in pieces
  • 4 Fresh figs, washed and sliced
  • 12 Rashes of prosciutto
  • A handful of sweet cherry tomatoes, washed and cut in half
  • A bunch of fresh basil to top

  1. In a large bowl, combine the pizza base ingredients until smooth
  2. Dust your work surface with a little flour and tip the dough onto it
  3. Work your dough by holding one part down, stretching the other away from you and rolling it back (Oh god, does this make any sense?)
  4. Repeat the step above a few times until the dough is springy before cutting it into approx. 150g pieces.
  5. Dust a baking tray with flour, place the dough balls on the tray (don’t place them too close to each as they will¬†stick to each other once they’ve risen).¬†Dust with a little flour and top with a damp cloth. Prove for about 1.5-2 hours
  6. Pre-heat your oven to 300c (when using a pizza stone, leave the stone in the oven so it can gradually heat up)
  7. Once your dough is ready, dust your work surface with a little flour and carefully spread out each of the dough balls
  8.  Top with a little tomato sauce, spread out and add the pizza toppings
  9. Very carefully, dust the pizza stone with flour and gently transfer the pizza to the pizza stone
  10. Bake for approx. 7 minutes or until the crust is golden and the cheese has melted
  11. Enjoy!
