Feta bean burgers

A great way to switch out meat for a healthier meal option with this recipe for feta bean burgers. Also lovely with melted cheddar. But then again, isn’t everything?


INGREDIENTS

  • 1 Can Canoli, Borlitti or Butterbeans, drained
  • 2 Garlic cloves, finely chopped and lightly fried
  • Half a block feta, crumbled
  • A bunch of coriander, finely chopped
  • 1 Egg, beaten
  • 2-3 Tbsp. Coconut flour
  • 1 Lemon, zested
  • 1 Red onion, finely sliced and marinaded for a couple of minutes in lemon juice
  • A few cherry tomatoes, washed and cut in half
  • A few sweet grilled peppers
  • 1 Avocado, sliced
  • 2 Pita bread or a couple of slices of a bread of choice
  • Houmous for topping (find my recipe for harissa houmous HERE)
  • Salt
  • Pepper
  • Oil for frying

DIRECTIONS

  1. Roughly blend the beans in a food processor (or blender)
  2. Add the egg, coriander, garlic, lemon zest, salt, pepper and coconut flour and mix well
  3. Stir in the feta and divide into about 4 burgers
  4. Heat the oil  and fry the burgers on both sides for about 7 minutes or until golden
  5. Serve with fresh or toasted (pita) bread, red onion, cherry tomatoes, avocado, peppers, lots and lots houmous and fresh coriander
  6. Enjoy!
