Mango and quinoa salad

A light, healthy and amazingly delicious quinoa salad!


INGREDIENTS

  • 100g Quinoa, washed and cooked
  • Half a mango, peeled and chopped into 2 cm pieces
  • Half a block feta cut into 1 cm pieces
  • A few cherry tomatoes, washed and cut in 4
  • An avocado, peeled and cut into 1cm pieces
  • A handful of spinach
  • A bunch of coriander roughly chopped
  • Half a lime, juiced
  • Salt
  • Pepper

DIRECTIONS

  1. Combine the quinoa, mango, cherry tomatoes and spinach
  2. Add in the coriander, feta, lime juice and season with salt and pepper
  3. Serve right away as a refreshing salad along side a tagine, wraps or anything you fancy
  4. Enjoy!
