Flourless blondies made with chickpea, chocolate chip and cashew butter

Another great, guilt-free recipe. These flourless blondies are dense, moist and absolutely delicious. Let your inner fatty soar!


INGREDIENTS

  • 1 Can of chickpeas or garbanzo beans, drained and rinsed
  • 100 ml Yoghurt
  • 1 Tsp. Baking powder
  • 2 Tbsp. Cashew, Almond or Peanut butter
  • 7 Dates (I used Medjool dates), de-pitted
  • A handful of chocolate chips, I used both white and milk chocolate
  • ½ Chocolate bar of choice (I used 70% chocolate), melted au bain Marie
  • A good handful raisins
  • ½ Unwaxed lemon, zested

DIRECTIONS

  1. Pre-heat the oven to 180c
  2. In a food processor, mix everything except the raisins, the melted chocolate and the chocolate chips
  3. Add the raisins, the chocolate chips and finally gently stir through the melted chocolate
  4. Transfer to a cake tin and bake for about 20 minutes leaving it a bit soft in the middle
  5. Keep the flourless blondies in an airtight container in the fridge
  6. Enjoy!
