Caramelised garlic and rosemary chicken

A quick dish full of flavour with this caramelised garlic and rosemary chicken! For those nights when you don’t have the time, or simply can’t be bothered..


  • 2 Chicken thighs
  • A few sprigs rosemary
  • 1 Whole bulb garlic
  • 500g Mixed wild mushrooms, washed and sliced
  • A few cherry tomatoes (optional)
  • A little olive oil
  • A dollop of butter (truffle butter would be amazing as well!)
  • Salt
  • Pepper


  1. Pre-heat the oven to 180c
  2. Cut of the bottom of the garlic bulb, making sure not to cut of too much of the garlic in the process
  3. Drizzle the garlic bulb with a little olive oil and place in the oven for 15-20 minutes or until the garlic has soften
  4. Let the garlic cool down a little before squeezing out the garlic
  5. Mix with a little olive oil, salt and pepper and rub all over the chicken thighs
  6. Sprinkle with some finely chopped rosemary, add the mushrooms and the cherry tomatoes, if you choose to add these, and place in the oven for about 20-25 minutes
  7. In the last 5 minutes pop a little butter on top of the chicken so keep it from drying out
  8. Serve with Jerusalem artichokes (recipe found HERE) or some triple fried chips, a fresh salad and a good glass of wine
  9. Enjoy!
