Gluten-free nut granola

A recipe for homemade gluten-free nut granola! A quick yet healthy and nut-ritious (see what I did there?) breakfast.


INGREDIENTS 

  • 50g Sunflower seeds
  • 50g Pumpkin seeds
  • 20g Chia seeds
  • 20g Flax seed
  • A handful desiccated coconut
  • A handful raisins
  • 300g rice puffs
  • 1 tsp. Cinnamon
  • 3 Tbsp. Coconut oil
  • 3 Tbsp. Honey
  • A little salt

DIRECTIONS

  1. Pre-heat the oven to 160c
  2. Lightly toast the seeds and melt down the coconut oil
  3. Mix all ingredients except the raisins and spread out on baking paper
  4. Bake for about 15 minutes or until golden brown (make sure it doesn’t burn)
  5. Let cool completely before breaking up in chunks
  6. Add the raisins and store in an airtight jar and serve with almond milk or yoghurt, some fresh berries and a dollop of one of my lovely rhubarb compote!
